今年のクリスマスケーキ、当初は違う物を予定していました。
毎年クリスマスケーキは２年前から構想を練り始めます。
ですから２年間温め続けて形にしていきます。
当店で通常お出ししておりますタルトは、生のフルーツをそのまま使った物は
滅多にございません。
たいがい火を通して加工してお出ししています。
その理由の一つとして、他所のお店で買える物を作っても
面白くないし、そんな物を作りたくて店を始めたんじゃない、っていう
私のへそ曲がり心。
もう一つが、生で食べて美味しいものを、
わざわざ人の手を加える必要があるのか、という事です。
フルーツが美味しいデザートであれば、
それはフルーツを作った農家さんが優れているという事。
（それを選び出す目も大事なのは承知しております）
もちろん人の手を加えることで何倍にも美味しさが膨らむのであれば、
それは手を加える意味があると思います。
しかし、そういったフルーツは、お値段が、高い。
そうなると「日常」というコンセプトで値段を設定している当店では
お出しすることができません。
そこで当店ではありふれた食材、
面白くて値段が手頃だがあまり知られていない食材を、
組み合わせに工夫しながらメニュー作りしているわけです。
（これは私の師匠の言葉
「値段の高いものでウマいものを作るのは簡単だ。
スーパーで普通に売ってる物でウマいものを作れるのが料理人の腕だ。」
に大きく影響されています。）
話を戻しますと、今年は大震災の影響で、県内の農家さんも被害を受けられました。
沿岸部が主な産地のイチゴ農家さんは、それでも栽培を再開されました。
そんな農家さんの苺を使ってみたいなぁ、と思いました。
当店なんかで使用する量では農家さんの経済的なお手伝いはできません。
ただただ思います。魂のこもった苺で一年の最後を締めくくれたら。
そう考えて、今年のクリスマスケーキの予定を変更しました。
生で苺を堪能できるケーキを。
